
Senatore Cappelli wheat is farmed in our fields. It’s an ancient North African variety of wheat characterized by a content of gluten, which is more similar and compatible with the human digestive system. Also here we employ an organic cultivation.
Our flour and our pasta are obtained from a handmade process and they retain all the fragrant taste of the wheat, by now barely perceptible in the industrial production. The exclusive use of this variety is due to the recovery of a centuries-old tradition, extremely rare and valuable.
Curiosity
For the pasta obtained from Senatore Cappelli wheat you must pay great attention to cooking time, which is much briefer due to its gluten content.
For the bread instead we recommend using the "yeast base“, now easily available in freeze-dried form.
This yeast ensures no annoying scents of beer and, above all, uniform leavening and a shelf life of up to ten days. Long ago, in fact, people made bread once a week and the loaf was so good that it kept its fragrance for the full week.
